A delightful treat combining rich chocolate, creamy peanut butter, and the sweetness of freeze-dried bananas.

- 1/2 cup freeze-dried bananas
- 4 ounces high-quality white chocolate, chopped
- 1/4 cup smooth processed peanut butter
Instructions
- On a cookie sheet lined with parchment paper, place the banana slices in a single layer close together. They should be almost touching.
- Bring a medium pot of water to a simmer. Once simmering, turn off the heat.
- Put the chocolate and peanut butter in a heatproof bowl and place it over the water (make sure no steam or water gets in the bowl). Let it sit over the hot water, uncovered, until about 2/3 melted. Gently stir it and allow it to melt further until completely smooth; chocolate is very sensitive when melting, so don’t rush it. Otherwise, it may seize (clump).
- Once fully melted, pour over the bananas then spread until all of the slices are covered.
- Let sit at room temperature for 1 hour or until set (you can refrigerate to speed this up).
- Cut into desired pieces; leftover bark can be stored at room temperature for up to 1 week or refrigerated for 2-3 weeks.
Notes
- This bark can be customized with different types of chocolate or additional mix-ins.
- Ensure no moisture gets into the chocolate to prevent seizing.
