Description

Delicious chocolate chip cookies with crunchy Rice Krispies added for extra texture.

Ingredients

Scale
  • 2 ¼ cups all-purpose flour (forms the base for your cookies; use whole wheat for added fiber.)
  • ½ teaspoon baking soda (helps the cookies rise to a perfect golden brown.)
  • ¼ teaspoon fine sea salt (enhances sweetness; opt for kosher salt if preferred.)
  • ¾ cup unsalted butter (melted, brings richness and depth to the cookie dough.)
  • ½ cup light brown sugar (packed, adds moisture and a subtle caramel flavor.)
  • ½ cup granulated sugar (balances sweetness with texture; coconut sugar can be a great alternative.)
  • 1 large egg (binds the ingredients together for a chewy cookie.)
  • 1 ½ teaspoons pure vanilla extract (choose pure for the best taste.)
  • 1 ½ cups semi-sweet chocolate chips (create melty pockets of delight.)
  • 1 ¼ cups Rice Krispie cereal (lightly toasted, adds a unique, crunchy texture that’s simply irresistible.)

Instructions

  1. Spread Rice Krispie cereal on a baking sheet and toast in a preheated oven at 300°F for 5–7 minutes, stirring halfway until they are golden and aroma fills the kitchen.
  2. In a medium bowl, combine 2 ¼ cups all-purpose flour, ½ teaspoon baking soda, and ¼ teaspoon fine sea salt. Mix until evenly distributed.
  3. In a large bowl, melt ¾ cup unsalted butter and stir in ½ cup packed light brown sugar and ½ cup granulated sugar until smooth and glossy, about 30 seconds.
  4. Beat in 1 large egg and 1 ½ teaspoons pure vanilla extract, scraping down the sides to combine all the flavors.
  5. Gradually add the dry mixture into the wet ingredients, stirring just until no flour remains.
  6. Gently fold in 1 ½ cups semi-sweet chocolate chips and the toasted Rice Krispie cereal, making sure not to crush them.
  7. Preheat the oven to 350°F and line two baking sheets with parchment paper. Scoop dough onto the sheets, spacing them apart, and bake for 10–12 minutes until edges are golden and centers remain soft.
  8. Let the cookies rest on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.

Notes

  • For a healthier option, consider using whole wheat flour.
  • Experiment with different types of chocolate chips or nuts.
  • Store cookies in an airtight container to maintain freshness.
