Description
Delicious chocolate chip cookies with crunchy Rice Krispies added for extra texture.
Ingredients
Scale
- 2 ¼ cups all-purpose flour (forms the base for your cookies; use whole wheat for added fiber.)
- ½ teaspoon baking soda (helps the cookies rise to a perfect golden brown.)
- ¼ teaspoon fine sea salt (enhances sweetness; opt for kosher salt if preferred.)
- ¾ cup unsalted butter (melted, brings richness and depth to the cookie dough.)
- ½ cup light brown sugar (packed, adds moisture and a subtle caramel flavor.)
- ½ cup granulated sugar (balances sweetness with texture; coconut sugar can be a great alternative.)
- 1 large egg (binds the ingredients together for a chewy cookie.)
- 1 ½ teaspoons pure vanilla extract (choose pure for the best taste.)
- 1 ½ cups semi-sweet chocolate chips (create melty pockets of delight.)
- 1 ¼ cups Rice Krispie cereal (lightly toasted, adds a unique, crunchy texture that’s simply irresistible.)
Instructions
- Spread Rice Krispie cereal on a baking sheet and toast in a preheated oven at 300°F for 5–7 minutes, stirring halfway until they are golden and aroma fills the kitchen.
- In a medium bowl, combine 2 ¼ cups all-purpose flour, ½ teaspoon baking soda, and ¼ teaspoon fine sea salt. Mix until evenly distributed.
- In a large bowl, melt ¾ cup unsalted butter and stir in ½ cup packed light brown sugar and ½ cup granulated sugar until smooth and glossy, about 30 seconds.
- Beat in 1 large egg and 1 ½ teaspoons pure vanilla extract, scraping down the sides to combine all the flavors.
- Gradually add the dry mixture into the wet ingredients, stirring just until no flour remains.
- Gently fold in 1 ½ cups semi-sweet chocolate chips and the toasted Rice Krispie cereal, making sure not to crush them.
- Preheat the oven to 350°F and line two baking sheets with parchment paper. Scoop dough onto the sheets, spacing them apart, and bake for 10–12 minutes until edges are golden and centers remain soft.
- Let the cookies rest on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
Notes
- For a healthier option, consider using whole wheat flour.
