Ingredients

- 1 cup whole wheat flour
- 1/2 cup ground flaxseed
- 1 cup grated carrots
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 cup honey or maple syrup
- 2 large eggs
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin.
- In a large bowl, mix whole wheat flour, ground flaxseed, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk together honey (or maple syrup), eggs, and grated carrots until combined.
- Gently fold the wet mixture into the dry ingredients until just combined—avoid overmixing.
- Spoon batter into muffin cups about two-thirds full.
- Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean. Let cool slightly before serving.
