Description

Delicious and nutritious carrot muffins made with whole wheat flour and flaxseed.


Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup ground flaxseed
  • 1 cup grated carrots
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin.
  2. In a large bowl, mix whole wheat flour, ground flaxseed, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together honey (or maple syrup), eggs, and grated carrots until combined.
  4. Gently fold the wet mixture into the dry ingredients until just combined—avoid overmixing.
  5. Spoon batter into muffin cups about two-thirds full.
  6. Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean. Let cool slightly before serving.
