- 4 boneless, skinless chicken breasts
- 5 cups fresh spinach
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Finely chop garlic and wash spinach thoroughly.
- Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, cooking for 6-7 minutes per side until golden brown. Remove from skillet.
- In the same skillet, add garlic and sauté for 30 seconds before adding spinach until wilted.
- Lower heat, add heavy cream, stir to combine, then sprinkle in Parmesan cheese until melted.
- Return chicken to skillet, spooning sauce over each breast.
- Plate Chicken Florentine with extra sauce drizzled on top; pair with rice or pasta if desired.
