Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 5 cups fresh spinach
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Finely chop garlic and wash spinach thoroughly.
  2. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, cooking for 6-7 minutes per side until golden brown. Remove from skillet.
  3. In the same skillet, add garlic and sauté for 30 seconds before adding spinach until wilted.
  4. Lower heat, add heavy cream, stir to combine, then sprinkle in Parmesan cheese until melted.
  5. Return chicken to skillet, spooning sauce over each breast.
  6. Plate Chicken Florentine with extra sauce drizzled on top; pair with rice or pasta if desired.
