This delicious roasted halloumi and vegetable dish is a perfect blend of flavors and textures, great as a side or a main.

- 250g halloumi cheese, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 medium zucchini, sliced
- 1 red onion, cut into wedges
- 200g cherry tomatoes
- 2 tbsp extra virgin olive oil
- 2 tsp dried oregano
Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a baking dish with nonstick spray.
- Chop all vegetables into uniform bite-sized pieces and place them in a large bowl.
- Drizzle with olive oil and sprinkle with oregano; toss until evenly coated.
- Arrange the vegetables in the baking dish and tuck in halloumi slices among them.
- Roast for 25-30 minutes, stirring halfway through until everything is golden brown.
- Remove from the oven and serve hot, garnished with fresh herbs if desired.
