This delicious honey teriyaki chicken is perfect for your slow cooker. It’s tender, flavorful, and easy to make!

- 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/2 cup soy sauce (or tamari for gluten-free)
- 1/4 cup honey
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon sesame oil
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- Cooked rice, for serving
- Sesame seeds and chopped green onions, for garnish
Instructions
- Place the chicken pieces in the slow cooker.
- In a medium bowl, whisk together the soy sauce, honey, brown sugar, garlic, ginger, sesame oil, and red pepper flakes (if using).
- Pour the sauce over the chicken, ensuring all pieces are coated.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and tender.
- About 30 minutes before serving, in a small bowl, whisk together the cornstarch and cold water until smooth.
- Remove the lid from the slow cooker and stir in the cornstarch slurry.
- Increase the heat to high and cook for 15-20 minutes, or until the sauce has thickened, stirring occasionally.
- Serve the honey teriyaki chicken over cooked rice.
- Garnish with sesame seeds and chopped green onions.
Notes
- This dish can be served with steamed vegetables for added nutrition.
- Feel free to adjust the sweetness by adding more or less honey and brown sugar based on your preference.
