Ingredients

- 8 oz spaghetti or fettuccine
- 4 cups baby spinach
- 3 cloves garlic, minced
- Zest and juice of 2 lemons
- 2 tbsp extra virgin olive oil
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain.
- In a large skillet over medium heat, add olive oil. Sauté minced garlic until fragrant, about 1 minute.
- Add spinach to the skillet, stirring until wilted, approximately 2 minutes.
- Stir in lemon zest, lemon juice, and reserved pasta water until well combined.
- Add drained pasta to the skillet, tossing well to coat. If needed, add more reserved pasta water for moisture.
- Serve topped with grated Parmesan cheese and season with salt and pepper.
Notes
- Use freshly squeezed lemon juice for the best flavor.
- Feel free to add grilled chicken or shrimp for added protein.
