Description
Deliciously fluffy mini muffin bites made with cottage cheese and blueberries, perfect for breakfast or snacks.

- 1 cup cottage cheese
- 2 large eggs
- 1/3 cup plain Greek yogurt
- 2 tablespoons unsalted butter, melted
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon fine sea salt
- 2 tablespoons granulated sugar (optional)
- 1 cup blueberries (fresh or frozen)
- Powdered sugar or extra maple syrup for serving (optional)
Instructions
- Preheat oven to 350°F (175°C) and generously grease a mini muffin tin or line with paper liners.
- Add cottage cheese, eggs, Greek yogurt, melted butter, maple syrup or honey, vanilla, lemon zest, and lemon juice to a blender or food processor. Blend until completely smooth and creamy.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, and granulated sugar if using until well combined.
- Pour the blended cottage cheese mixture into the dry ingredients and gently stir with a spatula until just combined and no dry pockets of flour remain. Do not overmix.
- Fold in the blueberries gently so they are evenly distributed throughout the batter. If using frozen blueberries, add them straight from the freezer.
- Divide the batter evenly among the prepared mini muffin cups, filling each about three quarters full.
- Bake for 12 to 15 minutes, or until the bites are puffed, lightly golden at the edges, and a toothpick inserted in the center comes out mostly clean.
- Allow the pancake bites to cool in the pan for 5 minutes, then carefully loosen the edges and transfer to a cooling rack.
- Serve warm with a dusting of powdered sugar or a drizzle of maple syrup, or let cool completely for meal prep and storage.
Notes
- These muffin bites can be stored in an airtight container for up to 3 days.
- They can also be frozen for longer storage; simply reheat in the microwave when ready to serve.
