Description

Deliciously fluffy mini muffin bites made with cottage cheese and blueberries, perfect for breakfast or snacks.


Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/3 cup plain Greek yogurt
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 2 tablespoons granulated sugar (optional)
  • 1 cup blueberries (fresh or frozen)
  • Powdered sugar or extra maple syrup for serving (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and generously grease a mini muffin tin or line with paper liners.
  2. Add cottage cheese, eggs, Greek yogurt, melted butter, maple syrup or honey, vanilla, lemon zest, and lemon juice to a blender or food processor. Blend until completely smooth and creamy.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and granulated sugar if using until well combined.
  4. Pour the blended cottage cheese mixture into the dry ingredients and gently stir with a spatula until just combined and no dry pockets of flour remain. Do not overmix.
  5. Fold in the blueberries gently so they are evenly distributed throughout the batter. If using frozen blueberries, add them straight from the freezer.
  6. Divide the batter evenly among the prepared mini muffin cups, filling each about three quarters full.
  7. Bake for 12 to 15 minutes, or until the bites are puffed, lightly golden at the edges, and a toothpick inserted in the center comes out mostly clean.
  8. Allow the pancake bites to cool in the pan for 5 minutes, then carefully loosen the edges and transfer to a cooling rack.
  9. Serve warm with a dusting of powdered sugar or a drizzle of maple syrup, or let cool completely for meal prep and storage.

Notes

  • These muffin bites can be stored in an airtight container for up to 3 days.
  • They can also be frozen for longer storage; simply reheat in the microwave when ready to serve.
