- 1 pound ground beef
- 1 pound chorizo sausage
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced (red or green)
- 1 can (14oz) diced tomatoes
- 1 can (15oz) kidney beans, drained and rinsed
- 1 can (15oz) black beans, drained and rinsed
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup beef broth
- 1 tablespoon olive oil
- Optional toppings: shredded cheese, sour cream, chopped cilantro, jalapeños
Instructions
- Gather all your ingredients and have them ready for cooking. Dice the onion and bell pepper, and mince the garlic.
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the ground beef and chorizo to the pot. Cook until browned, breaking it apart as it cooks, for about 5-7 minutes.
- Add the diced onion, garlic, and bell pepper to the pot. Sauté for an additional 5 minutes until the vegetables are softened.
- Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Cook for another 2 minutes to release the spices’ aromas.
- Add the diced tomatoes, kidney beans, and black beans to the pot. Mix well to combine.
- Add the beef broth to the mixture, stirring until everything is well blended.
- Bring the chili to a gentle boil, then reduce the heat and let it simmer for 10-15 minutes. This allows the flavors to meld perfectly.
- Sample a spoonful of your chili. Adjust seasonings as necessary, adding extra salt or spices based on your preference.
- Remove from heat, and let the chili sit for a few minutes before serving.
