  • 1 can (15oz) kidney beans, drained and rinsed
  • 1 can (15oz) black beans, drained and rinsed
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup beef broth
  • 1 tablespoon olive oil
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, jalapeños

Instructions

  1. Gather all your ingredients and have them ready for cooking. Dice the onion and bell pepper, and mince the garlic.
  2. In a large pot or Dutch oven, heat the olive oil over medium heat.
  3. Add the ground beef and chorizo to the pot. Cook until browned, breaking it apart as it cooks, for about 5-7 minutes.
  4. Add the diced onion, garlic, and bell pepper to the pot. Sauté for an additional 5 minutes until the vegetables are softened.
  5. Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Cook for another 2 minutes to release the spices’ aromas.
  6. Add the diced tomatoes, kidney beans, and black beans to the pot. Mix well to combine.
  7. Add the beef broth to the mixture, stirring until everything is well blended.
  8. Bring the chili to a gentle boil, then reduce the heat and let it simmer for 10-15 minutes. This allows the flavors to meld perfectly.
  9. Sample a spoonful of your chili. Adjust seasonings as necessary, adding extra salt or spices based on your preference.
  10. Remove from heat, and let the chili sit for a few minutes before serving.
