Description

Delicious and easy taco chicken fajitas, perfect for a quick weeknight dinner.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 medium bell peppers (1 red, 1 green), sliced
  • 1 medium red onion, cut into wedges
  • 2 tbsp taco seasoning
  • 2 tbsp olive oil
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)
  • Sour cream or Greek yogurt (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Slice the chicken breasts into strips and generously season with taco seasoning.
  3. Slice the bell peppers and red onion into thin wedges. Toss them in a bowl with olive oil and a pinch of salt.
  4. Spread the seasoned chicken on one half of the baking sheet and pile the vegetables on the other half. Drizzle any remaining olive oil over everything.
  5. Roast in the preheated oven for 20-25 minutes until cooked through and slightly charred.
  6. Drizzle fresh lime juice over fajitas before serving. Top with chopped cilantro and a dollop of sour cream or Greek yogurt.
