Delicious and easy taco chicken fajitas, perfect for a quick weeknight dinner.

- 1 lb boneless, skinless chicken breasts
- 2 medium bell peppers (1 red, 1 green), sliced
- 1 medium red onion, cut into wedges
- 2 tbsp taco seasoning
- 2 tbsp olive oil
- Juice of 1 lime
- Fresh cilantro, chopped (for garnish)
- Sour cream or Greek yogurt (for serving)
Instructions
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Slice the chicken breasts into strips and generously season with taco seasoning.
- Slice the bell peppers and red onion into thin wedges. Toss them in a bowl with olive oil and a pinch of salt.
- Spread the seasoned chicken on one half of the baking sheet and pile the vegetables on the other half. Drizzle any remaining olive oil over everything.
- Roast in the preheated oven for 20-25 minutes until cooked through and slightly charred.
- Drizzle fresh lime juice over fajitas before serving. Top with chopped cilantro and a dollop of sour cream or Greek yogurt.
Notes
- These fajitas are great served with tortilla wraps or over rice.
- Feel free to add other vegetables like zucchini or mushrooms for extra flavor.
