Description

  • 4 tablespoons Melted Butter (Oil is a suitable dairy-free alternative.)
  • 2 tablespoons Vegetable Oil (Any neutral oil will work.)
  • 1 cup Extra Fine Semolina (Helps create the distinct flaky texture of Meloui.)

Instructions

  1. In a mixing bowl, combine the all-purpose flour, fine semolina, salt, and sugar. Gradually add warm water, mixing until a soft dough forms that’s slightly tacky but holds together well.
  2. Knead the dough for about 10 minutes until it becomes elastic and smooth.
  3. Cover the dough with a clean cloth and let it rest for 30 minutes.
  4. Divide the rested dough into golf ball-sized pieces. Lightly oil each ball with vegetable oil.
  5. On an oiled surface, flatten each ball into a thin circle. Brush each circle with the melted butter and oil mixture, sprinkling extra fine semolina on top.
  6. Fold the edges of the circle toward the center to create a strip, then coil it into a spiral shape.
  7. Gently flatten each spiral into a round pancake about 1/4 inch thick.
  8. Heat a skillet over medium heat. Cook each pancake for about 2-3 minutes per side until golden brown.
  9. Serve your delicious Meloui warm with honey, butter, or jam.
