Description

A quick and delicious side dish featuring asparagus tips sautéed with lemon and olive oil.


Ingredients

Scale
  • 1/2 lb. asparagus tips
  • 1 T good quality olive oil
  • 1 lemon, zested and juiced

Instructions

  1. Heat the olive oil in the largest frying pan you have.
  2. Add asparagus in a single layer and turn heat to medium-high. Cook asparagus 4-5 minutes, turning about once a minute. Asparagus is done when the thickest part of the stalk can be pierced fairly easily with a fork but asparagus still has some snap to it and is starting to brown.
  3. Turn off heat, then pour over desired amount of lemon juice.
  4. Arrange asparagus tips on a plate, sprinkle with lemon zest and serve immediately.
  5. If using the whole pound of asparagus, trim the woody ends and cut asparagus into two pieces, keeping the ends and tips separate. Cook the ends about 2 minutes before adding the tips to the pan, then add the tips and cook an additional 4-5 minutes.

  • If making 4 servings, use the whole pound of asparagus.
