Description

This delicious garlic thyme sweet potato gratin is creamy, cheesy, and perfectly baked to golden brown perfection.


Ingredients

  • 2 pounds sweet potatoes
  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup shredded Gruyère cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves (plus more for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a medium baking dish.
  2. Peel and thinly slice sweet potatoes into 1/8-inch rounds using a mandoline slicer for best results.
  3. In a small saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Add heavy cream, salt, pepper, and thyme to the garlic butter. Let it simmer gently for 2–3 minutes. Remove from heat.
  5. Arrange sweet potato slices vertically in the prepared baking dish, slightly overlapping each slice.
  6. Pour the garlic cream mixture evenly over the sweet potatoes.
  7. Sprinkle Gruyère cheese between and over the potato slices.
  8. Cover with foil and bake for 30 minutes to allow the potatoes to soften.
  9. Remove foil, top with Parmesan, and continue baking uncovered for 25–30 minutes until golden brown and bubbly.
  10. Let rest for 10 minutes before serving. Garnish with extra thyme.

  • For best results, use a mandoline slicer for even sweet potato slices.
