This delicious garlic thyme sweet potato gratin is creamy, cheesy, and perfectly baked to golden brown perfection.

- 2 pounds sweet potatoes
- 3 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1 cup shredded Gruyère cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh thyme leaves (plus more for garnish)
Instructions
- Preheat oven to 375°F (190°C) and grease a medium baking dish.
- Peel and thinly slice sweet potatoes into 1/8-inch rounds using a mandoline slicer for best results.
- In a small saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add heavy cream, salt, pepper, and thyme to the garlic butter. Let it simmer gently for 2–3 minutes. Remove from heat.
- Arrange sweet potato slices vertically in the prepared baking dish, slightly overlapping each slice.
- Pour the garlic cream mixture evenly over the sweet potatoes.
- Sprinkle Gruyère cheese between and over the potato slices.
- Cover with foil and bake for 30 minutes to allow the potatoes to soften.
- Remove foil, top with Parmesan, and continue baking uncovered for 25–30 minutes until golden brown and bubbly.
- Let rest for 10 minutes before serving. Garnish with extra thyme.
Notes
- For best results, use a mandoline slicer for even sweet potato slices.
