Description

Ingredients

  • 2 cups fresh spinach
  • 1 pound large shrimp, deveined
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons extra virgin olive oil
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook orzo: Boil salted water in a large pot, add orzo, and cook until al dente (about 8 minutes). Drain and set aside.
  2. Sauté garlic: In a skillet over medium heat, heat olive oil. Add minced garlic and cook until fragrant (about 30 seconds).
  3. Cook shrimp: Add shrimp to the skillet; season with salt and pepper. Cook until pink and opaque (3-4 minutes).
  4. Add spinach: Stir in fresh spinach until wilted (2-3 minutes).
  5. Combine: Pour in chicken broth and lemon juice; simmer gently for about 2 minutes. Fold in cooked orzo and sprinkle with Parmesan before serving.
