- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 cup unsalted butter (softened)
- 1 cup granulated sugar
- 3 large eggs
- 1 cup freshly brewed strong coffee
- 1 cup chopped walnuts (toasted)
- 2 cups powdered sugar (for frosting)
- 8 oz cream cheese (softened)
Instructions
- Preheat your oven to 350°F (175°C) and grease two round cake pans.
- In a bowl, whisk together the flour and baking powder; set aside.
- In a large bowl, cream the softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition.
- Gradually mix in the brewed coffee until combined.
- Fold in the dry ingredients until just mixed; gently stir in the toasted walnuts.
- Divide batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Let cakes cool completely before frosting with cream cheese mixture.
