Description

A delicious and easy Garlic Parmesan Chicken dish served with tender baby potatoes, perfect for a weeknight dinner.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 6 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 4 tbsp extra virgin olive oil
  • 1 lb baby potatoes, halved
  • 2 tsp dried Italian herbs (oregano, basil, thyme)
  • to taste Salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spray a large baking dish with nonstick cooking spray.
  3. Pat the chicken breasts dry and season generously with salt, pepper, and half of the dried herbs.
  4. In a bowl, mix minced garlic, olive oil, Parmesan cheese, and remaining herbs.
  5. Place seasoned chicken in the baking dish; arrange halved potatoes around them.
  6. Drizzle the garlic-Parmesan mixture over the chicken and potatoes.
  7. Bake for 25–30 minutes or until chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
