Description

A delicious dessert made with glutinous rice, coconut milk, and fresh mango.


Ingredients

  • 1 cup glutinous rice
  • 1 cup full-fat coconut milk
  • 2 ripe mangoes
  • ½ cup granulated sugar
  • ¼ tsp salt

Instructions

  1. Rinse glutinous rice under cold water until clear. Soak for at least 4 hours or overnight.
  2. Drain the rice and steam in a steamer lined with cheesecloth for about 30 minutes until fully cooked.
  3. In a saucepan over medium heat, combine 1 cup of coconut milk, ½ cup of sugar, and ¼ tsp salt. Stir until sugar dissolves—do not boil.
  4. Mix three-quarters of the coconut sauce into the cooked rice and let sit for 10 minutes to absorb flavors.
  5. Peel and slice the mangoes into wedges.
  6. Serve sticky rice on plates, top with mango slices, and drizzle with remaining coconut sauce.
