Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small bowl, whisk together honey, minced garlic, and soy sauce until well combined.
- Place the salmon fillets on one side of the baking sheet and arrange mixed vegetables on the other side in a single layer.
- Brush half of the honey-garlic mixture over the salmon and pour any remaining marinade over the vegetables.
- Bake for 15-20 minutes or until the salmon flakes easily with a fork and reaches an internal temperature of at least 145°F (63°C).
