- 4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1 medium sweet onion, chopped
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- 2 tbsp extra virgin olive oil
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Prepare Your Ingredients: Chop the garlic and onion, and measure out your spices.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 4-5 minutes on each side until golden brown and cooked through (internal temperature should be 165°F).
- Sauté Vegetables: Remove the chicken and set aside. In the same skillet, add chopped onions and garlic; sauté for about 3-4 minutes until translucent.
- Create the Sauce: Pour in the chicken broth and bring to a simmer. Add heavy cream along with paprika, thyme, salt, and pepper. Stir occasionally and cook for about 5-7 minutes until slightly thickened.
- Return Chicken to Skillet: Nestle seared chicken back into the sauce, cover, and let simmer on low heat for another 10-15 minutes.
- Serve It Up!: Plate the smothered chicken over rice or mashed potatoes, garnishing with fresh herbs if desired.
