  • 1 egg (large)
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/3 cup strawberry jam
  • 2 ounces cream cheese (softened)
  • 2 cups powdered sugar
  • 1/4 cup hot milk
  • 1 teaspoon vanilla extract (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the room temperature butter, granulated sugar, and 2 teaspoons of vanilla extract until light and fluffy.
  3. Beat in the egg, then gradually incorporate the flour, baking soda, a bit of the freeze-dried strawberry powder, and salt.
  4. Stir in the strawberry jam until well combined.
  5. Roll the dough into tablespoon-sized balls and place them on the baking sheet.
  6. Bake for 8 minutes; tap the baking sheet gently to flatten, then bake for an additional 2-3 minutes.
  7. In a bowl, mix softened cream cheese, powdered sugar, hot milk, remaining strawberry powder, and 1 teaspoon of vanilla extract until smooth.
  8. Dip cooled cookies into the icing or drizzle it on top.
