Delicious cookies made with freeze-dried strawberries and topped with a cream cheese icing.

- 3 cups freeze-dried strawberries (ground into a fine powder)
- 1 cup salted butter (room temperature)
- 1 cup granulated sugar
- 1 egg (large)
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1/3 cup strawberry jam
- 2 ounces cream cheese (softened)
- 2 cups powdered sugar
- 1/4 cup hot milk
- 1 teaspoon vanilla extract (for icing)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the room temperature butter, granulated sugar, and 2 teaspoons of vanilla extract until light and fluffy.
- Beat in the egg, then gradually incorporate the flour, baking soda, a bit of the freeze-dried strawberry powder, and salt.
- Stir in the strawberry jam until well combined.
- Roll the dough into tablespoon-sized balls and place them on the baking sheet.
- Bake for 8 minutes; tap the baking sheet gently to flatten, then bake for an additional 2-3 minutes.
- In a bowl, mix softened cream cheese, powdered sugar, hot milk, remaining strawberry powder, and 1 teaspoon of vanilla extract until smooth.
- Dip cooled cookies into the icing or drizzle it on top.
Notes
- Ensure the butter is at room temperature for easy creaming.
- Do not overbake the cookies, as they will continue to cook slightly after removing from the oven.
