Description

This refreshing salad combines crispy prosciutto with assorted greens, tomatoes, and a creamy dressing.


Ingredients

Scale
  • 3 ounces prosciutto
  • 5 ounces assorted salad greens
  • 1 handful little tomatoes
  • 1 tablespoon fresh chives (chopped)
  • 2 heaping tablespoons Greek yogurt
  • 2 tablespoons olive oil
  • 2 teaspoons Dijon mustard
  • 1 teaspoon liquid honey
  • 1 tablespoon lemon juice
  • 1 clove garlic (minced)
  • Salt & pepper (to taste)

Instructions

  1. Preheat oven to 375F. Move the rack to the middle position.
  2. Add the prosciutto in a single layer to a baking sheet that’s been covered with parchment paper. Bake for 12-15 minutes, or until it’s crispy but not burned.
  3. Meanwhile, whisk the dressing ingredients together in a small bowl.
  4. Add the salad greens, chives, and tomatoes to a large bowl.
  5. Once the prosciutto is done, let it cool for a few minutes then break it into desired size pieces.
  6. Toss the salad with the dressing and sprinkle the prosciutto on top.

Notes

  • The prosciutto is quite salty, so adjust additional salt accordingly.
