Description

A delicious and savory pepperoncini chicken dish that’s easy to make and full of flavor.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup sliced pepperoncini peppers
  • 2 tablespoons butter
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the Chicken – Start by patting the chicken breasts dry with a paper towel. This small step helps them develop a golden crust in the skillet. Season both sides with salt, pepper, garlic powder, onion powder, and paprika. Whenever I make this dish, the seasoning alone already fills the kitchen with a warm, savory scent that hints at the meal to come.
  2. Sear the Chicken – Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, place the chicken in the pan. Let it cook undisturbed for about 5–6 minutes until a golden crust forms. Flip the chicken and cook another 4–5 minutes. The goal here is not to cook it fully yet, but to lock in flavor. Remove the chicken and set it aside.
  3. Build the Flavor – In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Stir in the chicken broth and gently scrape up the flavorful browned bits stuck to the pan. These bits are pure flavor and help give the Pepperoncini Chicken Skillet its rich taste.
  4. Add the Pepperoncini – Add the sliced pepperoncini peppers, oregano, and thyme. The broth will begin to simmer, and the peppers will release their bright tangy flavor into the sauce.
  5. Finish Cooking the Chicken – Return the chicken to the skillet. Spoon some of the sauce and peppers over the top. Reduce heat to medium-low and let everything simmer for about 10 minutes, until the chicken is fully cooked and tender.
  6. Add Butter for a Silky Sauce – Stir in the butter at the end. It melts into the broth, creating a silky sauce that coats the chicken beautifully. Sprinkle with fresh parsley before serving.

Notes

  • This dish pairs well with rice or a fresh salad.
  • For extra flavor, marinate the chicken in the spices for a few hours before cooking.
