Description

A delicious and hearty dish featuring tater tots, beef, and cheese baked to perfection.


Ingredients

  • 1 pound thinly sliced ribeye or sirloin beef
  • 32 ounces frozen tater tots
  • 8 ounces sliced provolone cheese
  • 8 ounces shredded sharp cheddar or Monterey Jack cheese
  • 1 diced onion
  • 1 diced green bell pepper
  • 2 cloves freshly minced garlic
  • 2 cups beef broth or stock
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons neutral cooking oil (vegetable, canola, or grapeseed)
  • to taste salt
  • to taste freshly ground black pepper
  • 1 teaspoon dried oregano or Italian seasoning blend

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Slice your beef as thinly as possible, dice your onions and green bell peppers, and mince your garlic.
  3. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the diced onions and green bell peppers. Sauté for 5-7 minutes until softened and slightly caramelized. Remove and set aside.
  4. Add another tablespoon of oil to the skillet and increase the heat to high. Add the thinly sliced beef in a single layer and cook for 1-2 minutes per side until browned. Season with salt and pepper and drain any excess liquid.
  5. Return all the beef to the skillet, pour in the beef broth and Worcestershire sauce, and scrape up any browned bits. Let it simmer for a minute, then stir in the minced garlic and cook for another minute. Mix in the sautéed onions and bell peppers.
  6. Spread half of the frozen tater tots in a single layer in the baking dish. Spoon the beef and veggie mixture evenly over the tater tots.
  7. Arrange half of your sliced provolone cheese over the beef mixture.
  8. Carefully arrange the remaining frozen tater tots over the cheese layer and top with the remaining cheese.
  9. Bake for 30-40 minutes until the tater tots are golden brown and crispy, and the cheese is melted and bubbly.
  10. Let the bake rest for 5-10 minutes before serving.

Notes

  • Feel free to add mushrooms or other vegetables to the sautéed mixture for extra flavor and nutrition.
  • For a spicier kick, consider adding some diced jalapeños.
