- Prepare the Cheesecake Filling: In a small bowl, beat together the softened cream cheese, sugar, and vanilla extract until smooth. Place in the fridge to chill while you make the dough — this helps firm it up for easier handling later.
- Make the Pumpkin Butter Cookie Dough: In a mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add in the egg, vanilla extract, and pumpkin butter. Stir until everything is well combined and silky. In a separate bowl, whisk the flour, baking soda, salt, cinnamon, and nutmeg. Gradually mix the dry ingredients into the wet ingredients, stirring just until combined. The dough will be soft and slightly sticky — that’s perfect.
- Assemble the Cookies: Scoop about 1½ tablespoons of dough and gently flatten it in your hand. Place about 1 teaspoon of the cheesecake filling in the center, then top with another 1 tablespoon of dough. Pinch the edges to seal, roll into a ball, and place on a lined baking sheet. Repeat until all dough is used.
- Bake to Perfection: Preheat your oven to 350°F (175°C). Bake the cookies for 11–13 minutes, or until the edges are set and just slightly golden. The centers may look a bit soft — that’s exactly what you want for a chewy, tender bite.
