Ingredients

  • 1 cup fresh strawberries, hulled
  • 1 ½ cups milk (dairy milk or almond milk)
  • 3 tablespoons chia seeds
  • 23 tablespoons honey or maple syrup, adjusted to taste
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • Extra fresh strawberries, sliced (for topping)

Instructions

  1. BLEND THE STRAWBERRIES: Add the fresh strawberries and milk to a blender. Blend until completely smooth and silky. The mixture should be bright pink with no visible fruit pieces.
  2. COMBINE THE INGREDIENTS: Pour the strawberry mixture into a medium bowl or jar. Add the chia seeds, honey or maple syrup, vanilla extract, and salt. Stir thoroughly until the chia seeds are evenly distributed and no clumps remain.
  3. REST AND STIR AGAIN: Let the mixture sit for 5 minutes at room temperature. Stir again to prevent the chia seeds from settling at the bottom. This step ensures even thickening.
  4. CHILL UNTIL THICK: Cover the bowl or seal the jar and refrigerate for at least 4 hours or overnight. The chia seeds will absorb the liquid and create a thick, pudding-like texture.
  5. STIR AND SERVE: Remove from the refrigerator and stir well until creamy. Spoon into serving glasses and top with sliced strawberries before serving.
