- 1 cup fresh strawberries, hulled
- 1 ½ cups milk (dairy milk or almond milk)
- 3 tablespoons chia seeds
- 2–3 tablespoons honey or maple syrup, adjusted to taste
- ½ teaspoon vanilla extract
- Pinch of salt
- Extra fresh strawberries, sliced (for topping)
Instructions
- BLEND THE STRAWBERRIES: Add the fresh strawberries and milk to a blender. Blend until completely smooth and silky. The mixture should be bright pink with no visible fruit pieces.
- COMBINE THE INGREDIENTS: Pour the strawberry mixture into a medium bowl or jar. Add the chia seeds, honey or maple syrup, vanilla extract, and salt. Stir thoroughly until the chia seeds are evenly distributed and no clumps remain.
- REST AND STIR AGAIN: Let the mixture sit for 5 minutes at room temperature. Stir again to prevent the chia seeds from settling at the bottom. This step ensures even thickening.
- CHILL UNTIL THICK: Cover the bowl or seal the jar and refrigerate for at least 4 hours or overnight. The chia seeds will absorb the liquid and create a thick, pudding-like texture.
- STIR AND SERVE: Remove from the refrigerator and stir well until creamy. Spoon into serving glasses and top with sliced strawberries before serving.

- This pudding can be made a day ahead to allow for optimal thickening.
