- 8 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1 can (10 oz) diced tomatoes with green chiles, drained
- 1/4 cup sour cream (optional)
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish (optional)
Instructions
- Let cream cheese soften at room temperature for about 30 minutes.
- Drain diced tomatoes with green chiles thoroughly.
- In a large mixing bowl, combine cream cheese, sour cream (if using), garlic powder, onion powder, salt, and pepper. Mix until smooth.
- Fold in diced tomatoes and green chiles. Stir in shredded cheddar and Monterey Jack cheese until well combined.
- Transfer to a microwave-safe bowl or pan. Heat in 30-second intervals (or on stovetop over low), stirring in between, until melted and creamy.
- Serve warm in a bowl. Garnish with parsley or cilantro and extra shredded cheese if desired.
- Pair with crackers, tortilla chips, or fresh veggies.

- This dip can be made ahead of time and reheated before serving.
